A passionate advocate of sustainability in farming and growing, her Ballymaloe Organic Farm School brings students from all over the world to hone their culinary skills at this sustainable, biodiverse Farm-to-Table project.

Simon is an Irish politician who served as Táiniste and a Member of the European Parliament. With experience in both politics, and policy, Simon has a BSc in Agriculture and Land Management, and has worked as an agriculture advisor and farm manager.

FARMING FOR NATURE
Founded in 2018, Farming for Nature is a non-profit initiative whose mission is to support, encourage and inspire farmers in a way that will improve the natural health of our countryside. Brigid Barry has been the manager since its inception.

One of the UK’s most decorated journalists, Dylan is an acknowledged expert on fashion. He has edited leading publications and advised many brands including Soho House, Savile Row, The British Fashion Council and Thomas Pink.

Alison Gault is Professor of Regenerative Textiles and Fashion at Belfast School of Art and a renowned educator and designer. She is a recognised UK Design Council Expert and serves as Chair of the Irish Grown Wool Council (IGWC).

ORGANIC DAIRY FARMER
Thomas took over the family farm in 2012 and transitioned to organic farming in 2018. Since then he has adopted the Korean Natural Farming method - a regenerative approach using indigenous microorganisms to create fertile soils.

Lilian is a first-year medical student at University College Cork, and an advocate for positive change. She focuses on education for sustainable development, working to bridge the gap between knowledge and action in climate change.

THE GALWAY WOOL CO-OP
Blátnaid is an Irish organic wool and lamb producer, dedicated to revitalising Native Irish wool and promoting sustainable agricultural practices. She founded the Galway Wool Co-op, Ireland's first virtual wool growers' cooperative.

The Burrenbeo Trust is a charity dedicated to promoting and enabling community stewardship across Ireland. Brendan works directly on projects including The Hare’s Corner, Farming for Nature, Project ReFarm and the Burren Winterage Weekend.

Mario is Creative Director of Mourne Textiles, in County Down, Northern Ireland. For three generations, this family-run manufacturer has produced woven contemporary home furnishings inspired by a rich weaving heritage.
